C’est un duo que les habitants apprécient depuis des générations et que la plupart des visiteurs ne découvrent jamais par eux-mêmes.

De là, l’itinéraire traverse le centre-ville jusqu’à un bol de «sopa de lima», la soupe emblématique du Yucatán qui marie la fraîcheur des agrumes aux épices chaudes de la région. Simple, profondément réconfortante et impossible à reproduire en dehors de la péninsule.

Au Mercado 28, la prochaine étape est un panucho de cochinita pibil : une tortilla croustillante garnie de haricots frits, de porc mariné à feu doux, d’oignons marinés et d’herbes fraîches.
